SESAME OIL
Sesame oil is derived from the seeds of Sesamum indicum (obtained from either pre-roasted or raw seeds, or a combination thereof). The oil yield using the cold-pressing method constitutes 45–60% of the seed mass.
Sesame oil is devoid of mineral elements and contains virtually no vitamins, with the exception of tocopherols and vitamin K. This oil is characterized by a high concentration of tocopherols (vitamin E), particularly gamma-tocopherol (316.7% of the Daily Value [DV] per 100 g), although it also contains a significant amount of alpha-tocopherol (71.3% DV).
As with other vegetable oils, the primary nutritional determinants that constitute its value as a food ingredient are fatty acids. Specifically, the fatty acid profile is dominated by unsaturated fatty acids (200.6% DV per 100 g), notably polyunsaturated omega-6 fatty acids (442.5% DV, primarily linoleic acid (18:2) – up to 47.19 g per 100 g). The content of the monounsaturated oleic acid (18:1) is also substantial, reaching 39.68 g per 100 g. Other fatty acids, both unsaturated and saturated, are present in negligible quantities.
Sesame oil serves as a significant source of phytosterols (1572.7% DV per 100 g), within which beta-sitosterol predominates significantly (57.23–64.28% of total phytosterol content, amounting to 1313.8% DV per 100 g). This characteristic allows for the classification of sesame oil as a “female-oriented” functional product (for further details, see Avocado). The concentrations of campesterol (250.0% DV), stigmasterol (146.0% DV), and delta-5-avenasterol (95.5% DV) are also notably high.
Sesame oil contains no carbohydrates, purine bases, or oxalic acid.
In general, the fundamental “profile” of sesame oil (qualitative and quantitative composition of tocopherols, fatty acids, and phytosterols) exhibits a high degree of similarity to that of corn oil. A key distinguishing feature of sesame oil is its content of lignanssesamin, sesamolin, episesamin, sesaminol, and sesamol—which possess antioxidant, hypotensive (blood pressure-lowering), anticarcinogenic, and hypocholesterolemic properties.
Evidence exists regarding the hepatoprotective effects of sesamin and sesamolin. Their lipolytic (fat-burning) activity is also under discussion (although higher concentrations than those naturally occurring in the oil appear necessary for this effect; for instance, a single dose of sesamin in lipolytic dietary supplements is 500–1000 mg, which is 110–210% of its content in 100 g of sesame oil).
Specifically, the total concentration of sesamin and sesamolin in extra virgin cold-pressed sesame oil ranges from 444 to 1601 mg per 100 g, with sesamin accounting for 238–1105 mg/100 g and sesamolin for 249–696 mg/100 g. In refined sesame oil, the sesamin content is 118–401 mg/100 g, episesamin is 12–206 mg/100 g, and sesaminol epimers are 5–35 mg/100 g; sesamolin is not detected. For comparison: the total lignan content in sesame seeds ranges from 205 to 1178 mg/100 g (sesamin: 67–804 mg/100 g), and in tahini (sesame paste): from 11 to 763 mg/100 g.
