CORN OIL
Corn oil is derived from corn germ (Zea mays L.), which contains between 37% and 55% fatty oil. Corn oil is extracted via cold pressing of the germs, separated from the corn kernels prior to starch processing, or by solvent extraction (e.g., hexane/petroleum ether). The average yield of technical-grade oil constitutes approximately 2.2–2.5% of the total dry seed mass.
Corn oil contains negligible amounts of vitamins and mineral elements, with few exceptions. Notably, it is characterized by a high concentration of tocopherols (Vitamin E), particularly gamma-tocopherol (486.7% of the daily value per 100 g), while also maintaining a significant concentration of alpha-tocopherol (109.7% of the daily value).
Although the mineral profile of corn oil is quite limited, it contains detectable quantities of chromium (13.6% of the daily value per 100 g).
Among the primary nutrients defining the value of corn oil as a functional food ingredient are fatty acids. The fatty acid profile is dominated by unsaturated fatty acids (200.6% of the daily value per 100 g), specifically polyunsaturated Omega-6 fatty acids (535.2% of the daily value; namely, linoleic acid (18:2) — 53.52 g per 100 g). The content of monounsaturated oleic acid (18:1) is also substantial, at 27.33 g per 100 g. Other fatty acids, both saturated and unsaturated, are present in lower concentrations.
Corn oil serves as a significant source of
phytosterols (1432.4% of the daily value per 100 g), with
beta-sitosterol as the predominant constituent (1208.6% of the daily value). Due to this profile, corn oil is often categorized among
estrogen-modulating products (for further details, see
Avocado). The concentrations of
campesterol (249.5%),
stigmasterol (197.9%), and
delta-5-avenasterol (95.5%) are also noteworthy.
Corn oil contains no carbohydrates, purine bases, or oxalic acid.
