Blueberry

BLUEBERRY
The fruits of the blueberry (Vaccinium corymbosum) exhibit a relatively limited vitamin profile, with the exception of ascorbic acid (46.9% of the Daily Value [DV] per 100 g) and vitamin K (phylloquinone) (16.1%). Contrary to popular misconceptions, these fruits are characterized by a low carotenoid concentration, specifically in regard to lutein and its isomer zeaxanthin (constituting only 1.3% DV per 100 g). For comparative clinical context: 100 g of cucumbers contain 383.0% DV of lutein, zucchini – 35.4%, and pattypan squash – 25.0%.
The predominant constituents of the mineral profile of blueberries are: silicon (73.3% DV per 100 g), vanadium (42.0%), boron (37.8%), iodine (17.5%), manganese (17.5%), lead (10.0%), cobalt (9.0%), chromium (9.0%), and rubidium (8.3%).
Blueberry fruits are rich in phytosterols (40.0% DV per 100 g), with beta-sitosterol serving as the primary constituent (36.4% DV). This significant concentration of beta-sitosterol allows blueberries to be clinically categorized as products for women, particularly when consumed in therapeutic quantities (for further biochemical details, see avocado).
They are further characterized by a substantial mono- and disaccharide fraction (15.2%), predominantly consisting of glucose (48.8% DV) and fructose (14.1%). The nutritional matrix includes dietary fiber (11.2%) and pectic substances (16.0%). They contain minor quantities of starch (0.03 g per 100 g) and sucrose (0.11 g).
The total purine base content per 100 g constitutes 6.7% of the daily allowance.
The concentration of oxalic acid per 100 g is 11 mg, representing 2.8% of the maximum tolerable daily intake (for further details, see Rhubarb).
It should be noted that blueberries exhibit a capacity for the bioaccumulation of the toxic ultratrace element lead (10.0% DV per 100 g).
