Black currant

BLACK CURRANT
The fruits of the black currant (Ribes nigrum) possess an exceptional concentration of vitamins, particularly ascorbic acid (263.0% of the Daily Value [DV] per 100 g) and tocopherols (vitamin E). Among the tocopherol isomers, the concentrations of delta-tocopherol (28.3%), gamma-tocopherol (26.9%), and alpha-tocopherol (13.7%) are notably high. The vitamin profile also includes pantothenic acid (8.0%). The species is characterized by a significant concentration of macro-, micro-, and ultratrace elements: silicon (203.1% DV per 100 g), boron (78.6%), cobalt (40.0%), molybdenum (34.3%), manganese (17.5%), potassium (14.2%), nickel (12.7%), rubidium (11.8%), copper (10.1%), vanadium (10.0%), and iron (10.0%).
Black currant fruits are distinguished by their amino acid profile, specifically glycine (7.4% DV per 100 g) and histidine (6.4%). They are rich in omega-3 polyunsaturated fatty acids (26.0% DV), including alpha-linolenic acid and the exceptionally rare botanical stearidonic acid (18:4). The nutritional matrix further includes total phytosterols (14.5%), mono- and disaccharides (14.6%)—with glucose (42.4%) and fructose (14.1%) as the predominant sugars—as well as dietary fiber (19.2%) and a high concentration of pectic substances (160.0% DV). Starch is absent from the composition, while sucrose is present in minor quantities (0.49 g).
The total purine base content per 100 g constitutes 5.0% of the daily allowance.
The concentration of oxalic acid per 100 g is 13 mg, representing 3.3% of the maximum tolerable daily intake (for further details, see Rhubarb).
Consequently, black currant fruits represent a unique multicomponent complex of antioxidants—encompassing ascorbic acid, tocopherol isomers, omega-3 polyunsaturated fatty acids, and polyphenolic compounds (specifically anthocyanidins)—and detoxifying agents, primarily pectic substances.
