CARROTS

 

     Carrots (Daucus carota subsp. sativus) are characterized by an exceptional concentration of beta-carotene (224.0% of the Daily Value [DV] per 100 g) and alpha-carotene (69.5%). Other significant nutrients include folate (13.8% DV). Its mineral profile is notably rich in: boron (286.0% DV per 100 g), vanadium (248.0%), silicon (83.0%), manganese (21.5%), molybdenum (28.6%), rubidium (23.5%), cobalt (20.0%), and potassium (13.0%).

 

     The nutritional profile is further distinguished by its essential amino acid threonine content (12.0% DV), the total sum of non-essential amino acids (14.4%), and the specific phytosterol daucosterol (27.3%). Carrots contain significant levels of mono- and disaccharides (13.4%), with glucose (18.3%) as the predominant sugar fraction, alongside dietary fiber (14.0%) and pectin (16.0%). The composition also includes a substantial quantity of sucrose (1.64–3.59 g per 100 g) and starch (1.48 g per 100 g).

 

 

     It is critical to note that carrots exhibit a high concentration of the toxic ultratrace element mercury (60.0% of the Daily Value per 100 g) and possess the capacity for the bioaccumulation of arsenic and strontium.

 

     The total purine base content per 100 g is low, constituting 5.0% of the daily allowance.

 

     The oxalic acid concentration per 100 g is 44 mg, representing 11.0% of the maximum tolerable daily intake (for further details, see Rhubarb).
     The occasional greening of carrots or parts of them is due to the accumulation of chlorophyll in their tissues, which accumulates as a result of exposure to sunlight. Root vegetables that have turned green in certain parts (external or internal) have a bitter taste, but they are not toxic and can be used in cooking.
