RHUBARB (stalks)
     Rhubarb (stalks) contains few vitamins, except for vitamin K (phylloquinone) (24.4% of the daily requirement in 100 g) and vitamin C (ascorbic acid) (21.4%).
     The main minerals are silicon (40.7%), calcium (17.9%), vanadium (17.3%), nickel (12.8%), potassium (11.6%), manganese (10.6%), and chromium (7.9%).
   Rhubarb stalks contain quite a lot of pectin (14.0% of the daily norm per 100 g) and fiber (12.8%), small amounts of starch (0.22 g per 100 g) and sucrose (0.1 g).
     The total purine base content in 100 g of rhubarb stalks is low, amounting to 1.7% of the daily requirement.

The possible danger of consuming rhubarb
(especially “adult” and older stalks) is due to their high content of oxalic acid
, which, when it enters the human body, binds with calcium cations (it can also bind with magnesium and divalent iron cations, but this occurs less frequently in the human body) and forms salts – oxalates. These oxalic acid salts – oxalates – concentrate and form crystals, well known as kidney stones
. People with kidney stones, gout, or rheumatoid arthritis should avoid foods rich in oxalates.

     During the development of stems in ontogenesis, their oxalic acid content increases. Stems up to 35 days old are best for consumption. Their oxalic acid content ranges from 0.15% to 0.53% (i.e., from 150 to 530 mg per 100 g). Young stalks mainly contain succinic and malic acids.
     According to the recommendations of the Ministry of Health, the daily intake of oxalic acid should not exceed 400 mg. Thus, 100 g of young rhubarb stalks contain on average 85% of the maximum permissible level of its consumption.
