Grapes

GRAPES

Grapes (Vitis vinifera) exhibit a relatively limited vitamin profile, with the notable exception of phylloquinone (vitamin K) (12.0% of the Daily Value [DV] per 100 g). However, they are characterized by a high concentration of specific mineral elements, within which the predominant constituents are: boron (521.0% DV per 100 g), strontium (175.0%), silicon (163.0%), rubidium (100.0%), manganese (39.0%), vanadium (25.0%), cobalt (20.0%), arsenic (17.0%), iron (15.0%), nickel (11.0%), potassium (9.8%), and iodine (8.0%).

Grapes possess a high mono- and disaccharide fraction (30.8% DV), within which glucose (74.0% DV) and fructose (20.3%) are the primary sugars. Starch is absent from the composition, while sucrose is present in minor quantities (0.5 g per 100 g).

The total purine base content per 100 g constitutes 6.7% of the daily allowance.

The concentration of oxalic acid per 100 g is 7.9 mg, representing 2.0% of the maximum tolerable daily intake (for further details, see Rhubarb).

It should be noted that grapes exhibit a significant capacity for the bioaccumulation of toxic mineral elements; specifically, they can sequester strontium (175.0% DV per 100 g) and arsenic (17.0%), as well as thallium (2.1%) and tin (1.3%).
