Peach

PEACH
The fruits of the peach (Prunus persica) exhibit a relatively limited vitamin profile, with the exception of ascorbic acid (9.4% of the Daily Value [DV] per 100 g). However, they possess a significant concentration of macro- and microelements: boron (267.0% DV per 100 g), silicon (33.0%), cobalt (29.0%), nickel (23.0%), rubidium (19.6%), chromium (14.2%), vanadium (10.0%), potassium (10.0%), and iron (7.3%).
The nutritional matrix is further rich in total phytosterols (18.2% DV) and mono- and disaccharides (16.6%), within which glucose serves as the predominant sugar (19.5% DV). The fruit also contains pectic substances (14.0%). Peaches may contain starch (up to 1.2 g per 100 g) and significant quantities of sucrose (4.76 g).
The total purine base content per 100 g constitutes 6.7% of the daily allowance.
The peach is devoid of oxalic acid.
