     Persimmon fruits (Diospyros kaki) are distinguished by an exceptional concentration of specific vitamins and minerals. They are particularly notable for their concentration of pantothenic acid (vitamin B5) (152.0% of the Daily Value [DV] per 100 g) and ascorbic acid (52.5% DV). The carotenoid profile is also significant, including beta-carotene (24.0%), beta-cryptoxanthin (28.9%), the xanthophylls lutein and its isomer zeaxanthin (13.9%), and biotin (vitamin B7) (15.0%).

 

      Persimmon fruits possess a diverse mineral profile, wherein the concentrations of twelve elements exceed 10% of the human daily requirement. Of particular clinical interest is the high concentration of iodine (40.0% DV), as well as rubidium (63.0%), cobalt (36.4%), lithium (28.1%), manganese (17.8%), iron (16.7%), vanadium (16.3%), chromium (15.8%), molybdenum (15.0%), magnesium (14.0%), calcium (11.5%), copper (11.3%), and potassium (8.0%).

 

    Persimmon fruits are rich in the mono- and disaccharide fraction (30.6% DV), within which glucose (57.0% DV) and fructose (16.9%) serve as the predominant sugars. The nutritional matrix also includes dietary fiber (10.4%) and pectic substances (17.0%). Starch is absent from the composition, while sucrose is present in significant quantities (1.54 g per 100 g).
