PATISSON
Patissons are chemically similar to zucchinis – it is no coincidence that they belong to the same species:
zucchini – is a species of common pumpkin, subspecies zucchini Cucurbita pepo ssp. pepo; patisson – is a species of common pumpkin, variety patisson Cucurbita pepo var. patisson or Cucurbita pepo var. patisoniana. Patissons are rich in carotenoids
lutein and its isomer zeaxanthin (in 100 g – 25% of the daily norm) – substances that can accumulate in the tissues of the eye,
providing effective protection for the eyes and vision;
ascorbic acid (21%),
silicon (96.7%),
boron (28%),
vanadium (16%),
cobalt (10%),
manganese (10%), plant sterol
beta-sitosterol (21.8%), which can lower cholesterol levels,
do not contain starch and
sucrose.
The total purine content in 100 g is 5.3% of the daily norm.
The content of
oxalic acid in 100 g is 22 mg, which constitutes
5.5% of the maximum allowable daily intake (for more details – see
Rhubarb).
Caloric content per 100 g: 18-19 kcal
Water in 100 g: 93-94 g
Ash from 100 g: 0.58-0.70 g
