WATERMELON
      Watermelon (Citrullus lanatus) is characterized by a high concentration of the carotenoid lycopene (90.6% of the Daily Value [DV] per 100 g), which exhibits significant antioxidant and anticarcinogenic properties; however, the fruit overall possesses a relatively limited vitamin profile. Among the mineral elements, the predominant constituents are: rubidium (77.0% DV per 100 g), silicon (40.0%), boron (25.7%), cobalt (20.0%), and potassium (9.4%). Furthermore, watermelon contains measurable quantities of silver (7.1%).
     The nutritional matrix includes a substantial mono- and disaccharide fraction (11.6% DV), within which glucose (17.0% DV) and fructose (9.9% DV) serve as the primary sugars.
