SORREL
     Sorrel is a significant source of Vitamin C and carotenoids, but it is characterized by a high concentration of oxalic acid (for further details regarding its toxicity, see Rhubarb).
    Sorrel is notable for its high content of Vitamin C (ascorbic acid) (68.7% of the Daily Value [DV] per 100 g), beta-carotene (50.0% DV), Vitamin K (phylloquinone) (37.5% DV), lutein and its isomer zeaxanthin (15.0% DV),  alpha-tocopherol (13.3% DV).
    The predominant mineral elements include: boron (55.6% DV), vanadium (29.8% DV), magnesium (23.5% DV), potassium (17.8% DV), manganese (17.5% DV), cobalt (17.0% DV), nickel (16.7% DV), iron (16.0% DV), copper (13.1% DV), iodine (10.2% DV), phosphorus (9.6% DV).
