CORN
Corn serves as a source of specific vitamins, minerals, proteins, and essential amino acids. It is characterized by a significant content of phytosterols, carbohydrates (predominantly starch and fiber), and purines.
Corn is rich in biotin (42.0% of the daily requirement per 100 g), vitamin B6 (pyridoxine) (31.0%), vitamin B1 (thiamine) (22.9%), vitamin PP (nicotinic acid) (18.2%), carotenoid lutein and its isomer zeaxanthin (16.7%), choline (14.2%), and vitamin B2 (riboflavin) (10.0%).
The mineral composition of corn comprises macro-, micro-, and ultramicroelements. It is dominated by: boron (385.7%), vanadium (232.5%), silicon (200.0%), rubidium (61.1%), nickel (55.9%), manganese (54.5%), cobalt (53.0%), zirconium (49.0%), molybdenum (40.6%), phosphorus (37.6%), selenium (35.0%), magnesium (31.8%), copper (29.0%), iron (24.7%), gold (16.7%), zinc (16.4%), chromium (16.0%), lithium (14.9%), potassium (11.5%), and sulfur (11.4%).
Corn is among the few plant species that contain gold.
Corn contains proteins (11.8%), as well as essential and non-essential amino acids (11.9% and 6.9% per 100 g, respectively). The essential amino acid profile is dominated by leucine (16.3%), valine (13.3%), and isoleucine (11.7%); among non-essential amino acids, the predominant one is proline (12.4%).
Corn is also characterized by a high content of phytosterols (127.3% of the daily norm per 100 g), primarily beta-sitosterol (148.1%), which allows corn to be classified as a “women’s product” (for further details, see Avocado).
Corn possesses a relatively high carbohydrate content (21.2%), with fiber being the dominant component of the carbohydrate fraction (33.8% of the daily norm per 100 g). Corn contains significant amounts of starch (58.2 g per 100 g) and pectin (10.0% of the daily norm per 100 g), as well as sucrose (2.06 g per 100 g).
Patients with gout should note that corn has a substantial content of purine bases: 46.7% of the daily norm per 100 g.
