      Kiwi fruits (Actinidia deliciosa) serve as an exceptional source of vitamin C (ascorbic acid) (195.0% of the Daily Value [DV] per 100 g). They possess a significant concentration of vitamin K (phylloquinone) (33.6% DV) and, relative to other fruits, vitamin E (alpha-tocopherol) (9.7%). The mineral profile consists of numerous macro- and microelements: boron (142.9% DV per 100 g), silicon (57.0%), rubidium (44.0%), strontium (15.1%), molybdenum (14.3%), copper (13.0%), potassium (12.0%), and cobalt (10.0%).
     Kiwi fruits are characterized by a relatively high concentration of total phytosterols (12.7% DV) and mono- and disaccharides (15.6%), within which glucose (41.0% DV), fructose (12.6%), and galactose (24.3%) serve as the predominant sugars.      Kiwi fruits contain minor quantities of the monoterpenoid pseudoalkaloid actinidin, which exhibits sedative properties, and proteolytic enzymes (proteases) that catalyze the hydrolysis of proteins.
     It should be noted that kiwi fruits exhibit a capacity for the bioaccumulation of the toxic microelement strontium (15.1% of the daily allowance per 100 g).
