Millet

MILLET
       Millet serves as a source of specific vitamins (particularly the B group), mineral elements, amino acids, starch, and fiber.
     Consequently, millet is characterized by a high content of biotin (28.6% of the daily norm per 100 g), vitamin B1 (thiamine) (24.7%), vitamin PP (nicotinic acid) (23.6%), vitamin B9 (folic acid) (21.3%), vitamin B6 (pyridoxine) (19.0%), pantothenic acid (17.0%), and vitamin B2 (riboflavin) (14.5%).
     The mineral composition of millet is represented by macro-, micro-, and ultramicroelements. It is predominantly composed of: vanadium (425.0%), boron (325.7%), silicon (251.3%), nickel (118.6%), cobalt (70.5%), manganese (62.8%), copper (46.5%), rubidium (44.5%), phosphorus (34.4%), magnesium (30.5%), iron (28.0%), molybdenum (27.1%), zirconium (22.4%), zinc (22.0%), selenium (18.2%), strontium (15.1%), chromium (11.3%), and potassium (10.5%).
     Millet contains proteins (13.8%), as well as essential and non-essential amino acids (19.2% and 12.1% of the daily norm per 100 g, respectively). Among the essential amino acids, the predominant ones are leucine (30.4%), valine (23.4%), and isoleucine (23.4%); among the non-essential amino acids proline (19.4%) and glutamic acid (18.0%).
      Millet is characterized by a relatively high content of omega-6 polyunsaturated fatty acids (linoleic acid: 20.2% of the daily norm per 100 g) and phytosterols (31.6% of the daily norm per 100 g).
       The total carbohydrate content in millet is relatively high (19.9%), with fiber being the dominant component (55.6% of the daily norm per 100 g). Millet contains significant amounts of starch (up to 64.6 g per 100 g) and pectin (14.2% of the daily norm per 100 g), as well as sucrose (1.13 g per 100 g).
      Millet is capable of accumulating the toxic trace element strontium (15.1% of the daily norm per 100 g).
      Patients with gout should note that millet contains purine bases: 28.3% of the daily norm per 100 g.
     The content of oxalic acid per 100 g is 21 mg, which constitutes 5.3% of the maximum allowable daily intake (for further details, see Rhubarb).
