GREEN ONIONS (feathers)
Green onions (feathers) are significantly richer in minerals and vitamins than onions.
     They stand out for their vitamin K (phylloquinone) content (153.8% of the daily requirement in 100 g), vitamin C (ascorbic acid) (51.1%), beta-carotene (46.1%), folic acid (16.9%), lutein and its isomer zeaxanthin (14.3%).
     The predominant mineral elements are: rubidium (453.0%), boron (314.3%), cobalt (70.0%), molybdenum (28.6%), vanadium (28.0%), silicon (16.7%), manganese (12.6%), copper (12.5%), magnesium (9.2%), potassium (9.1%), iron (8.0%), and chromium (8.0%).
     Green onions contain phytosterols (16.4% of the daily norm per 100 g), predominantly beta-sitosterol (12.5%).
    Glucose predominates in the monosaccharides of green onions (20.7% of the daily norm per 100 g), while pectin dominates among other carbohydrates (12.0%). Green onions contain small amounts of starch (0.1 g per 100 g) and sucrose (0.2 g).
     The total purine base content in 100 g of green onions is quite high, amounting to 50.0% of the daily norm.

The oxalic acid content in 100 g is 89 mg, which is 22.3% of the maximum permissible daily intake (for more details, see Rhubarb).

     Interestingly, the predominant components in the flavonoid composition of green onions are kaempferol (10 mg per 100 g), isorhamnetin (6.8 mg), and quercetin (4.8 mg).
     It is known that kaempferol and its glycosides have a diuretic (urine-producing) effect, isorhamnetin has a hypocholesterolemic (lowers blood cholesterol) effect, and quercetin has an anti-ischemic effect.
     All of them also have anti-inflammatory, antioxidant, hepatoprotective, and capillary-strengthening effects to varying degrees.
