PUMPKIN SEED OIL
Pumpkin seed oil is obtained from pre-cleaned, dried to 8% moisture, and ground (occasionally roasted) pumpkin seeds. The oil yield when using the cold-pressing method is 35%.

It is recognized that the finest pumpkin seed oil is produced in Styria, one of the nine federal states of Austria. A special variety of pumpkin is cultivated here — the Styrian oil pumpkin (Cucurbita pepo var. styriaca), the seeds of which lack a hard outer shell (hull-less). These seeds yield pumpkin seed oil of the highest quality — aromatic, rich, with distinct nutty notes.

Pumpkin seed oil is a rich dietary source of gamma- and delta-tocopherols, which possess significant antioxidant activity (for details, see Vegetable Oils), and phytosterols, particularly beta-sitosterol.
Unlike most other edible oils, pumpkin seed oil contains a range of vitamins and mineral elements. It is characterized by a high content of tocopherols (Vitamin E), especially gamma-tocopherol (643.4% of the daily value per 100 g) and delta-tocopherol (133.4% respectively), and also contains alpha-tocopherol (32.5%) and Vitamin K (17.4%).
The mineral elements are dominated by: iron (93.3% of the daily value per 100 g), copper (17.6% respectively), cobalt (13.0%), selenium (8.5%), and potassium (8.2%).
As with other oils, one of the defining nutrients of pumpkin seed oil, forming the basis of its value as a food ingredient, are the fatty acids. Thus, the fatty acid profile is dominated by unsaturated fatty acids (200.0% of the daily value per 100 g), in particular — omega-6 polyunsaturated fatty acids (462.5% of the daily value per 100 g), namely linoleic acid (18:2), the content of which reaches up to 51.3 g per 100 g. The content of monounsaturated oleic acid (18:1) is also high: up to 39.5 g respectively.
Pumpkin seed oil is a valuable source of phytosterols (1469.0% of the daily value per 100 g), with beta-sitosterol significantly prevailing (799.8% of the daily value respectively). This allows for the classification of pumpkin seed oil as a “female product” (for details, see Avocado). The content of stigmast-7,25-dienol (347.0%), delta-7,22,25-stigmastatrien-3-beta-ol (334.9%), delta-7-avenasterol (263.9%), alpha-spinasterol (196.8%), stigmasterol (81.0%), 24-methylcholest-7-enol (66.1%), and delta-7-stigmasterol (58.3%) is also notably high. Overall, the phytosterol composition of pumpkin seed oil differs from other edible oils and includes 12 different substances that harmoniously complement the action of beta-sitosterol.
Pumpkin seed oil does not contain carbohydrates, purine bases, or oxalic acid.
Extra virgin pumpkin seed oil contains a significant amount of chlorophyll (20 mg per 100 g), which accounts for its antibacterial, anti-inflammatory, and reparative effects.
