Wild garlic

WILD GARLIC (bear onion)
Wild garlic is notable for its vitamin C (ascorbic acid) content (210.7% of the daily requirement per 100 g), lutein and its isomer zeaxanthin (96.1% and 84.0% respectively), beta-carotene (84.0%), vitamin K (phylloquinone) (18.0%), biotin (17.9%), gamma-tocopherol (17.6%), vitamin B6 (pyridoxine) (11.5%), and folic acid (10.0%).
The predominant mineral elements are boron (44.6%), cobalt (44.5%), vanadium (43.8%), silicon (13.3%), potassium (13.2%), and calcium (10.9%).

Wild garlic contains mono- and disaccharides (12.2% of the daily norm per 100 g), predominantly glucose (21.0%), while pectin dominates among polysaccharides (12.0%). Wild garlic contains sucrose (0.6 g per 100 g) and a small amount of starch (0.1 g per 100 g).
The total purine base content in 100 g of wild garlic is 13.3% of the daily norm.

The oxalic acid content in 100 g is 50.0 mg, which is 12.5% of the maximum permissible daily intake (for more details, see Rhubarb).
