Chives

CHIVES (Scallion, green onion)
Chives are significantly richer in mineral elements and vitamins than bulb onion.
     It is distinguished by its content of vitamin K (phylloquinone) (in 100 g – 217.9% of the daily norm), vitamin C (ascorbic acid) (respectively – 117.9%), beta-carotene (33.8%), folic acid (20.0%), vitamin B6 (pyridoxine) (12.1%), alpha-tocopherol (10.0%), vitamin B2 (riboflavin) (9.4%).
 
     Among the mineral elements, the predominant ones are: manganese (155.0%), boron (53.4%), silicon (50.0%), nickel (43.3%), chromium (16.0%), copper (12.5%), potassium (10.5%), vanadium (10.0%), iron (10.0%).
 
     Chives contain phytosterols (in 100 g – 16.4% of the daily norm), with beta-sitosterol being the predominant one (respectively – 8.0%).
     Among carbohydrates pectin (10.0%) and fiber (10.0%) dominate. Chives contain a small amount of sucrose (in 100 g – 0.08 g), and do not contain starch.
     The content of total purine bases in 100 g of chives is low and amounts to 13.3% of the daily norm.
     The content of oxalic acid in 100 g – 95 mg, which constitutes 23.8% of the maximum allowable daily intake (for more details, see Rhubarb).
