Tarragon

TARRAGON
Tarragon is notable for its vitamin K (phylloquinone) content (200.0% of the daily requirement per 100 g), vitamin B6 (pyridoxine) (14.5%) and vitamin C (ascorbic acid) (14.3%).
Among the mineral elements, the following prevail: manganese (48.0%), vanadium (31.8%), potassium (10.4%), and cobalt (9.0%).
Tarragon is characterized by a fairly high content of omega-3 polyunsaturated fatty acids (linolenic acid) (35.7% of the daily norm per 100 g).
Tarragon contains phytosterols (17.8% of the daily requirement per 100 g), predominantly beta-sitosterol (12.5%).
Glucose dominates in the composition of monosaccharides (14.0%); pectin dominates in the composition of polysaccharides (16.0%). Tarragon contains sucrose (0.7 g per 100 g) and starch (0.5 g per 100 g).
The content of purine bases in 100 g of tarragon is 5.0% of the daily norm.

The oxalic acid content is low: 5.2 mg per 100 g, which is 1.3% of the maximum permissible daily intake (for more details, see Rhubarb).
