Gooseberry

GOOSEBERRIES

Gooseberries (Ribes uva-crispa) serve as a significant source of ascorbic acid (39.6% of the Daily Value [DV] per 100 g) and choline (8.4%). The mineral profile is characterized by a high concentration of macro- and microelements: silicon (40.0% DV per 100 g), rubidium (19.3%), molybdenum (17.1%), boron (15.7%), manganese (14.0%), copper (10.1%), cobalt (9.0%), and potassium (8.0%).

The stoichiometric ratio of potassium to sodium in gooseberries is 9:1, which facilitates their anti-edematous properties.

Gooseberries contain significant concentrations of the essential amino acid tryptophan (10.0% DV per 100 g). This amino acid serves as a biochemical precursor for the neurotransmitter serotonin, which regulates affective states, emotional resilience to stress, as well as vascular and muscular tone.

Gooseberries are distinguished by a relatively high concentration of omega-3 polyunsaturated fatty acids (specifically alpha-linolenic acid, 12.2% DV per 100 g), total phytosterols (12.7%), and mono- and disaccharides (18.2%), within which glucose (44.0% DV) and fructose (11.8%) are the predominant sugars. The nutritional matrix includes dietary fiber (13.6%) and pectic substances (17.6%). Starch is absent from the composition, while sucrose is present in minor quantities (0.6 g per 100 g).

The total purine base content per 100 g constitutes 6.7% of the daily allowance.

The concentration of oxalic acid per 100 g is 66 mg, representing 16.5% of the maximum tolerable daily intake (for further details, see Rhubarb).
