Garlic Greens

GARLIC (greens)

Garlic greens (scallions) are significantly richer in vitamins and mineral elements than its bulbs.

     They are distinguished by the content of vitamin C (ascorbic acid) (221.4% of the daily value per 100 g), vitamin K (phylloquinone) (180.0% respectively), vitamin B6 (pyridoxine) (68.5%), beta-carotene (48.6%), lutein and its isomer zeaxanthin (17.1%), pantothenic acid (13.6%), and folic acid (11.8%).
    The mineral composition of garlic greens is highly diverse. The predominant mineral elements include: boron (400.0%), germanium (129.5%), molybdenum (106.3%), chromium (103.8%), cobalt (101.0%), rubidium (96.3%), manganese (89.0%), vanadium (75.5%), copper (56.6%), silicon (43.3%), potassium (31.0%), selenium (29.4%), phosphorus (24.9%), magnesium (20.5%), zinc (16.9%), sulfur (15.6%), iron (15.3%), calcium (12.2%), sodium (10.5%), iodine (9.7%), nickel (9.7%).
     It is noteworthy that garlic greens, similar to the bulbs, contain a significant amount of germanium — an ultramicroelement rarely found in food plants.
    Garlic greens contain phytosterols (10.9% of the daily value per 100 g), with beta-sitosterol being the predominant component (6.0% respectively).
    Within the carbohydrate profile, pectin (10.0%) and fiber (9.2%) predominate. Garlic greens contain small amounts of sucrose (0.06 g per 100 g) and starch (0.08 g per 100 g).
     The total content of purine bases in 100 g of garlic greens constitutes 13.3% of the daily value.

The oxalic acid content per 100 g is 87.0 mg, which represents 21.8% of the maximum allowable daily intake level (for more details, see Rhubarb).
