Lettuce, leaf lettuce
      Leaf lettuce is notable for its contentof vitamin K (phylloquinone) (100 g contains 124.6% of the daily requirement), beta-carotene (88.9%), lutein and its isomer zeaxanthin (28.8%), vitamin C (ascorbic acid) (17.3%), and folic acid (10.8%).
     The most abundant minerals are: vanadium (425.0%), rubidium (153.0%), boron (121.4%), beryllium (60.0%), mercury (50.0%), silicon (43.0%), cadmium (40.0%), cobalt (40.0%), lithium (40.0%), manganese (13.8%), molybdenum (12.9%), nickel (8.5%), potassium (8.3%), cesium (7.1%).
    Lettuce contains phytosterols (69.1% of the daily norm in 100 g), predominantly beta-sitosterol (57.0%).
    Carbohydrates are dominated by pectin (8.0% of the daily requirement per 100 g) and fiber (5.0%). Lettuce contains a small amount of starch (0.4 g per 100 g) and practically no sucrose (0.05 g per 100 g).
     The content of purine bases in 100 g of lettuce is 10.0% of the daily norm.

The oxalic acid content in 100 g is 3.0 mg, which is 0.8% of the maximum permissible daily intake (for more details, see Rhubarb).

     It should also be noted that lettuce can accumulate toxic ultramicroelements such as beryllium, cadmium, mercury, and cesium.
