PARSLEY (greens)Parsley greens are significantly richer in minerals and vitamins than its root vegetables.

     Parsley greens are notable for their vitamin K (phylloquinone) content (658.3% of the daily requirement in 100 g), vitamin C (ascorbic acid) (431.4%), beta-carotene (111.1%), lutein and its isomer zeaxanthin (92.7%), folic acid (29.0%), alpha-tocopherol (17.7%), vitamin B2 (riboflavin) (16.8%), vitamin B6 (pyridoxine) (10.4%).
     The most abundant minerals are: manganese (155.0%), boron (107.1%), vanadium (61.3%), silicon (50.0%), iron (47.7%), nickel (43.3%), rubidium (41.5%), cobalt (41.0%), potassium (24.2%), lithium (21.0%), calcium (20.4%), iodine (17.1%), magnesium (16.1%), chromium (16.0%), copper (12.0%), zinc (10.7%), phosphorus (9.5%), sodium (8.8%).
 
     Parsley greens are characterized by a high content of omega-3 polyunsaturated fatty acids (namely, linolenic acid: 45.6% of the daily norm in 100 g).
    Parsley greens contain phytosterols (9.1% of the daily requirement per 100 g), predominantly beta-sitosterol (5.0%).
    Carbohydrates are dominated by pectin (30.0% of the daily requirement per 100 g) and fiber (10.8%). Parsley greens contain starch (up to 1.2 g per 100 g) and sucrose (also 1.2 g per 100 g).
     The total purine base content in 100 g of parsley greens is 28.0% of the daily norm.
